The Best Pumpkin Muffins!

It's autumn, which means pumpkin has made an appearance in the building! You most likely already have all of the ingredients, which is what makes this recipe so incredible. These muffins are delicious and won't last long, so make your plans accordingly! To top it all off, they're gluten free, sugar free, flourless, and vegan!


These muffins come together quickly and are completely customizable. This recipe's pumpkin puree creates a moist and fluffy muffin. While pumpkin is the best option, sweet potato or butternut squash can also be used.

So here's how to make it...



Ingredients:


3/4 cup pumpkin puree

1 cup peanut butter

1/3 cup honey or maple syrup

1/4 cup apple sauce or flax egg

1 tsp baking soda

1 tsp cinnamon

1/4 tsp salt

1/2 cup chocolate chips




Directions:


Preheat your oven to 350°F and coat a muffin tin with coconut oil.


In a mixing bowl, combine all of the ingredients and whisk until smooth. Fill each muffin tin halfway with batter, using a cookie scoop or a spoon.


Bake for 17 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool (if possible) before serving and enjoy!
